Cayenne pepper (Capsicum annuum), also known as bird pepper or Guinea spice, is a hot red pepper in the Capsicum genus. Used to flavor many cuisines, it’s added to dishes in fresh, dried or powdered form and is a key component in many sauces and marinades.

Cayenne gets its “heat” from capsaicin, a natural analgesic compound that produces a burning sensation in any tissue it comes into contact with. This active compound is often applied topically in lotion, cream or liquid form to ease pain and inflammation.

It is thought capsaicin may work by stimulating pain signals in the body and then deceasing them, dulling pain over time. Capsaicin was first extracted in impure form by Christian Friedrich Bucholz in 1816.
