Kale Salad with Tahini Dressing (pssst...and with Skin-Boosting Collagen)

This filling and refreshing kale salad delivers a satisfying burst of flavor and nutrients. And even more exciting, if you like to make your own salad dressing, which is much healthier and less expensive by the way, add an extra nutrient boost from collagen.

Ingredients

1 bunch kale (squeeze ½ lemon over torn kale pieces and massage in a bowl for 2 minutes)

½ to 1 cup shredded carrots

Sea salt and black pepper to taste

¼ cup shaved parmesan cheese (optional)

1 tablespoon avocado oil

½ block baked tofu, cut into small pieces

½ cup canned chickpeas or Great Northern beans, drained and rinsed

Collagen Tahini Dressing

2 to 3 tablespoons organic tahini, stirred; This JEM cashew curry tahini would be amazing too.

Juice of ½ lemon

1 teaspoon raw honey

Pinch each sea salt and black pepper

1 scoop NeoCell Super Collagen Powder  

Directions

1. Place kale in a salad bowl. Add carrots, salt, pepper and parmesan cheese.

2. In a skillet, heat avocado oil over medium-high heat. Add tofu pieces and sauté until crispy. Add beans and heat 1-2 minutes. Add tofu and beans to salad and top with homemade croutons (see recipe below).

3. Combine dressing ingredients in a bowl. Whisk in a little water until dressing thins to desired consistency.

Homemade Croutons

Preheat over to 350o. Cut day-old bread into pieces; drizzle with EVOO and toss with 1 clove minced garlic, salt and pepper. Spread on baking sheet. Bake 10-15 minutes or until crispy.

JUICED-UP COCKTAIL featuring NEOCELL

Serves 2

INGREDIENTS 

½ raw organic red beet, scrubbed, trimmed and unpeeled

3 small or 1 large organic carrot, scrubbed, trimmed and unpeeled

1 medium organic unpeeled lime, washed

1 large organic unpeeled orange, washed

1 medium organic unpeeled apple, washed

1-inch piece fresh ginger, peeled

¼ cup fresh wheatgrass or 1 ounce wheatgrass juice

1 generous handful organic parsley, washed

2 scoops NeoCell Super Collagen

2 tablespoons raw organic agave nectar

Ice

DIRECTIONS

1. Using a high-powered juicer, juice the beet, carrot, lime, orange, apple, ginger, wheatgrass and parsley.

2. Whisk NeoCell Super Collagen and agave into the juice until completely dissolved. If you’re using purchased pre-juiced wheatgrass, add it here instead of Step 1.

3. Fill two glasses with ice and pour juice through a fine-mesh strainer into glasses. If desired, garnish with citrus peel and more parsley.

Apple Cinnamon Waffles with Honey Almond Butter Collagen Syrup

Don’t pigeon-hole your breakfast! This innovative, healthy take on the morning classic is positively divine (and nutritious). You'll never taste the collagen, but you'll get the effects of strengthening, hydrating and protecting your skin. That's a great way to start the day!

Waffle Ingredients

Serves 1

1 large apple (finely chopped in a food processor) or ¾ cup chunky applesauce

3 tablespoons cassava flour or oat flour

1 tablespoon ground flaxseed

2 large eggs

½ tablespoon ground cinnamon

Honey Almond Butter Collagen Syrup

1 scoop NeoCell Collagen Powder

½ tablespoon honey

1½ tablespoons almond butter

1 tablespoon non-dairy milk

Directions

1. Heat waffle iron. In a bowl, combine chopped apple (or applesauce), flour, flaxseed, eggs and cinnamon; blend with a whisk.

2. Spray surface of waffle iron with nonstick spray. Add batter to waffle iron and cook according to appliance directions.

3. Meanwhile, whisk together syrup ingredients in a bowl. Drizzle syrup over warm waffle and enjoy!

Ingredients

2 tilapia fillets, cut in half lengthwise

¼ cup ground flaxseed meal

2 eggs, whisked

1 teaspoon NeoCell Collagen Powder

½ cup cooked quinoa, cooled

2 tablespoons coconut oil

Salt and pepper, to taste

Small corn tortillas

½ avocado, peeled and sliced

Fresh sprouts

Mango Salsa

1/3 cup diced mango

1/3 cup chopped cherry tomatoes

1 diced shallot

¼ cup chopped fresh cilantro

Juice of ½ lemon

Salt and pepper

Directions

1. Place flaxseed meal in a bowl. In a separate bowl, whisk together eggs and NeoCell Collagen Powder. Place cooked (room temperature) quinoa in a third bowl. Dip both sides of tilapia fillets in flaxseed. Next, dip them quickly into egg mixture, letting excess drip off. Then dip tilapia in the quinoa. Press quinoa into the tilapia.

2. In a skillet over medium-high heat, heat coconut oil until liquid and hot. Cook tilapia until cooked through and browned and crispy on the outside, about 4 minutes per side. Season tilapia with salt and pepper.

3. While the tilapia cooks, in a bowl combine Mango Salsa ingredients.

4. Serve cooked tilapia in corn tortillas; top with Mango Salsa, sliced avocado and fresh sprouts.

Strawberry Banana Collagen Green Smoothie

Ingredients

Serves 2

1 large handful spinach

1 fresh or frozen banana, peeled

6 to 8 fresh or frozen strawberries

2 tablespoons chia seeds

1 tablespoon green powder

8 to 12 ounces non-dairy milk

2 tablespoons Greek yogurt (optional)

Directions

Peel and cut bananas. Wash and cut strawberries if fresh. Place all ingredients in a high-speed blender. Blend until creamy and serve immediately. Add more liquid, if necessary, until smoothie reaches desired consistency.
