Kids Love Crispy Flaxseed Waffles

What kid doesn’t love waffles?! (Even us big kids do.)

These grain-free, crispy waffles are made entirely of ground flaxseed. They’re also gluten-free, paleo, vegan + keto-friendly.

Flaxseeds are packed with protein and fiber, along with a ton of other vitamins and minerals (calcium, magnesium, phosphorus, copper, and manganese). It’s also an excellent source of iron, which kids can be low in. The fat in flaxseeds is a plant based form of healthy omega-3 fats, which are an essential fat all kids need.

Dress up your waffles either sweet or savory by infusing them with fresh herbs or ground cinnamon.

Make it sweet: Once your waffles are complete, top these bad boys with your favorite fruits like strawberries, raspberries or blueberries. Add a dollop of coconut cream.

Make it savory: Add fresh herbs into the batter, such as rosemary, parsley and thyme or a combo of all three. Top with roasted veggies, shredded chicken, avocado, sautéed onions, such as a waffle sandwich. My kids also love their waffles topped with eggs, bacon, and syrup.

Ingredients

2 cups roughly ground golden flaxseed

1 Tbsp gluten-free baking powder

1 tsp sea salt

5 large eggs

½ cup water

1/3 cup avocado oil or extra virgin olive oil or melted coconut oil

1 Tbsp fresh herbs, such as rosemary, parsley and thyme (if making savory) or 2 tsp ground cinnamon

Instructions

Heat your waffle maker to medium, or your desired setting for crisp waffles.

Combine flax seed with baking powder and sea salt in a large bowl. Whisk to combine fully and set aside.

Add eggs, water and oil to the jug of your high-powered blender (it must be a blender or this recipe will not work). Blend on high for 30 seconds, until foamy.

Transfer foamy liquid mixture to the bowl with the flaxseed mixture.

Stir with a spatula, just until incorporated. The mixture will be very fluffy. Once incorporated, allow to sit for 3 minutes to firm up. Be patient. It will get thicker and thicker.

Add in your fresh herbs or ground cinnamon.

Makes about 4 servings so scoop each, one at a time, onto the preheated waffle maker and close the top. Cook until you get the desired crispiness and repeat with remaining batter.
